This site was created originally for my fellow employees at the Apple Store The Gateway in Salt Lake City, but grew to who ever wanted to rock in Mario Kart Wii.
Most all of the tips and tricks on this site I have done and are confirmed, some of them I have not and received sources from the following sites:

Quick Start
When the countdown starts wait till the 2 starts to disapper and then press and hold the gas button (Button 2 if your on the Wii Wheel, or Wii Controllers, Button A if your on Game Cube Controller). Be sure to hold it just as the 2nd light is starting to disappear. This will give you a boost at the start of the race.
How to Avoid a "POW" Block
When you see a POW block on your screen and its about to hit you, just do the funtion you would normally use for a trick to create a shockwave (control panel on GCN controller, shake Wii wheel, etc.). This will make yourself become immune to the spin out the POW creates. By doing this you will not loose speed or spin out, however you will still loose the items you were carrying. This can be done on karts and bikes.
Fall Off Boost
When you fall off a course into water, lava, space such as in Rainbow Road you get picked up and put back on the course. If you hit the gas (2 or A) at the moment you hit the ground, you'll get a little boost, but it's still much faster if you just don't fall off the courses. ;-)
Profile Name Stars
You can add a star next to your profile name on the results screen and the Wi-Fi races by completing all Grand Prix races with a certain rank:
One star profile name:
Earn a One Star rank in all Grand Prix races.
Two star profile name:
Earn a Two Star rank in all Grand Prix races.
Three star profile name:
Earn a Three Star rank in all Grand Prix races.
Note: If you get a Three star rating in every Grand Prix except one which you got a One star rating in. You would get a One starred nickname until you manage to upgrade the rank.
Alternate Title Screen and Ending Sequence
Get a One Star rank or better in all Cups, including those in Mirror mode to unlock an alternate title screen and ending sequence.
Change Mii Racer Weight Class
Go into the Mii Channel and change your Mii drivers weight, which will have an in game impact causing you to change weight class and have different cars.

With a Super Mario Galaxy save, win a series of Grand Prix cups/Without Galaxy save, Attain at least 1 Star Rank for all Mirror Grand Prix Cup
Note from IGN.com:Unlocking Rosalina appears to be somewhat enigmatic (and possibly even random), but in the game's own words, involves having Super Mario Galaxy save data on your Wii somewhere along the line ("You Got a Present From Super Mario Galaxy" appears on her unlocking). It seems she will unlock at different times for different players however, some reporting it on merely booting up the game, others on winning the Banana or Mushroom cups at 100cc with a 2 star ranking. These could be good places to begin your search if she hasn't appeared for you yet.

About Weight classes
There are three types of Characters.
Small: These characters ride in Small karts. They have mostly a good acceration and off-road ratio, but low top speed. By their weight, these characters can be knocked apart if they try to bump onto other kart of superior weight.
Medium: They ride in Middle weight karts. Most of these characters show an average acceleration, weight and off-road.
Large: These characters are defined by their strength, capable of banging apart other karts with low weight. They ride on Large vehicles, featuring high top speed and weight, but showing low acceleration, moverbility, and off-road.

About Vehicles
There are 36 total vehicles in the Wii installment. 18 karts, 18 bikes, each divided into the 3 weight classes, making 6 and 6 available to each character, 3 and 3 to begin (thus making half of the vehicles unlockables. Each has 7 stats which are shown during character selection:
Speed: How high the top speed of the vehicle is. This does not affect off-road travel.
Acceleration: How quickly the vehicle's top speed is achieved from a non-moving position.
Weight: How heavy a kart is. With a higher weight, the player can knock lighter characters away by ramming them. Bikes are lighter than karts.
Handling: How tight the kart can normally turn. Usually opposes the drift rating.
Drift: How tight the kart turns while using the drifting maneuver. Usually opposes the handling rating.
Off-Road: How much speed the kart retains when off of the track. A low rating of this can cause a near-standstill for the vehicle.
Mini-Turbo: When using the manual drift option, how effective a mini-boost will be.
There are six "types" of bikes and karts (as each kart has a bike with similar stats):
(Note: the type names are all conjecture. If someone has the actual names, please submit them.)
Standard: These are well-rounded and are suitable for beginners. Examples would be the Standard Kart L or Standard Bike S.
Speed: These are very fast and have a good drift, but have poor off-road and acceleration. Examples would be the Wild Wing or the Flame Runner.
Control: These are rather slow, but feature exellent control and off-road, making them mirrored to Speed vehicles. Examples would be the Booster Seat or the Sugarscoot.
Cruiser: These control similarly to Control types, but have more speed and off road but less acceleration and handling. Examples would be the Piranha Prowler or the Zip Zip.
Rally: These vehicles are almost perfectly well rounded, but have great off road in return for poor drift. Examples would be the Tiny Titan or the Shooting Star.
Jet: Normally unlocked later in the game, these vehicles are incredibly fast and quite heavy, but are poor in all other stats.

About Courses
Both new tracks and retro tracks from all four previous games are playable.
Race courses are divided into various Cups again: Mushroom Cup, Flower Cup, Star Cup and Special Cup for new courses and Shell Cup, Banana Cup, Leaf Cup and Lightning Cup for old courses. Notably, these are the same as Mario Kart DS.
Luigi Circuit

In Mario Kart Wii, Luigi Circuit is once again the starting track of the Mushroom Cup. The track features a giant statue of Luigi as well as the return of the Cheep-Cheep balloon. At the end of the course a giant crowd has gathered to watch the race from bleachers. The background is reminiscent of New Super Mario Bros.
Mushrooms

Gives vehicle a quick speed boost.
Triple Mushroom

Gives vehicle three quick speed boost to use individually.
Golden Mushroom

Leverage a Golden Mushroom for as many speed boost as you'd like over a short period of time. center>
Mushrooms

Gives vehicle a quick speed boost.
Mega Mushroom

Dominate the track as you temporarily speed up as a giant and flatten everything in your way.
Item Box

Run over these to receive an item, but be sure not to run over the fake item box's.
Fake Item Box

These boxes look enticing, but you'll discover they're fake the hard way as your vehicle flips.
Banana

Vehicles that run over banana's will spin out.
Triple Banana

Get three bananas to put behind you and throw foreward or backward at your leasure. Great tool for blocking red or green shells.
Green Shell

Green Shells move in straight lines and flip any vehicles they hit.
Mushrooms

Gives vehicle a quick speed boost.
Mushrooms
