2 pkgs mixed color spiral noodles
1 can artichoke hearts
1 can marinated olives or pkg of Kalamata olives
1 large red pepper
1 large red onion
1 lb mushrooms
1/2 head garlic
3 zucchini
2 pkgs Tofu, chopped and sauted in olive oil
pesto, about 1 cup (see Heidi's recipe)
Feta cheese, crumbled (we used one Costco container)

Saute veggies in oil. Saute tofu seperately. Cook pasta and drain. Combine all ingredients and serve.
