Beta Grape - Vintner's Beta Wine

Tasting Notes

Lighter in color than the alpha wine. The niagra juice adds some dimension to this lightly flavored wine. It is a very pleasant wine with a clean grape flavor.

26.7 pounds beta grapes from North Fargo

These have been in the freezer for a couple weeks. They were destemmed by hand while frozen and placed in the primary. These were sprinkled with 2g pot. Metabisulifute powder.

3 gallons of boiling water was added to the nearly frozen grapes. The lukewarm grapes were crushed by hand and with a paint stirrer. Pecinase was added.

The grape must was strained and the pulp squeezed by hand to yield just shy of 5 gallons. This was used for the reserve alpha wine.

The pressed pulp was placed in a primary. To this was added 2 gallons niagra grape juice and 1.5 gallons water. 6 pounds of sugar raised the SG to 1.090. One tsp fermaid and one tbsp of citric acid was added. Lavlin EC118 yeast was sprinkled on top.

Must was strained and the pulp pressed. No color left at all in the skins. SG 1.047. Transferred to 5 gallon carboy. Looks about 3.5 gallons volume.

10/14/2003

SG 0.992 racked into 3 gal and 1/2 gal containers.

1/24/2004

SG 0.990. Racked into 3 gal + 750 mL. 1.2 g sulfite added.

2/8/2004

Filter #3 – 1 g sulfite added. Bottled into 15 750 mL bottles and one 16 OZ bottle. 12.2% alcohol.
