Beta Grape - Vintner's Alpha Wine

Tasting Notes

light rose colored wine with a lovely grape nose and a crisp dry grape flavor. Full body and lingering finish.

26.7 pounds beta grapes from North Fargo

These have been in the freezer for a couple weeks. They were destemmed by hand while frozen and placed in the primary. These were sprinkled with 2g pot. Metabisulifute powder.

3 gallons of boiling water was added to the nearly frozen grapes. The lukewarm grapes were crushed by hand and with a paint stirrer. Pecinase was added.

The grape must was strained and the pulp squeezed by hand to yield just shy of 5 gallons. 1/2 gallon of water was added to bring the level over 5 gallons. The SG of this measured 1.034. Nine pounds of sugar were added raising the gravity to 1.092. 2 tsp of fermaid were added. The must is deep in color and nicely balanced in flavor. I think it has plenty of acid. Lavlin EC118 yeast was sprinkled on top. The pulp was used for a second wine - beta beta.

Must was passed through a strainer again and transferred to a 6.5 gallon carboy.  SG 1.020. Volume looks like about 5.5 gallons.

SG 0.990. Racked into 5 gallon and 1/2 gallon containers.

1/24/2004

Racked into 5 gallon and 750 mL, SG 0.991. 2.4 g suflite added.

2/8/2004

Filter #3 – 2 g sulfite added. Bottled into 25 750 mL bottles.  12.5% alcohol.
