Apple Raspberry Wine

Tasting Notes

4/29/2004 Light and refreshing with a crisp light raspberry flavor. This has a bit of spritz to it (bottled too soon probably) but that lends to the lightness of the wine. Color is a pale pink.


8/10/2003

2 gallons apple juice
2 quarts raspberry syrup
3 quarts water
2 pounds sugar
2 tbsp citric acid
1 tbs yeast nutrient

Everything mixed. SG measured 1.099 --- Lavlin EC-1118 yeast sprinkled on top of must.

SG measures 1.065 – fermenting well. Transferred to 5 gal carboy and fitted with airlock.

SG 1.070 ?? measured right?

9/21/2003

SG 0.994. Racked into 3 g carboy. 1.2 g sulfit3e added. Light pink/brown color. Raspberry comes through on the nose and taste is light and refreshing. Nice.

Filter #3 – 0.6 g sulfite. SG 0.994 – bottled 13 750 mL and 2 12 oz. 13.4 % alcohol
