Pork Tenderloin with Rosemary and Thyme

Method

Trim fat from pork. Place pork on a broiler pan coated with cooking spray.

Preheat oven to 350degF. Combine mustard and remaining ingredients in a small bowl; brush over pork. Insert a meat thermometer into thickest part of one tenderloin.

Bake at 350degF for 50 minutes or until meat thermometer registers 160 (slightly pink), basting frequently with mustard mixture.

Notes

Very easy, pretty quick (very little prep required), and very yummy. I cooked the pork for 45 minutes since my thermometer wasn't working, and it was quite nice and juicy. I served it with brown rice, spaghetti squash, and fresh (uncooked) spinach.
