Zest three of the lemons and place the zest into a large, heatproof bowl with the castor sugar. Set aside.

In a large saucepan, bring the barley and water to a boil. Reduce the heat and simmer for 10-15 minutes.

Pour the water and barley over the zest and sugar, and let cool completely.

Squeeze the juice from the zested lemons and strain into a large jug.

Strain the cooled barley-water infusion into the jug and chill thoroughly. Just before serving, add lemon slices from the remaining lemon and ice to the jug.

Notes

Very refreshing and takes everyone in America by surprise. Dale says it's the standard drink at Wimbledon.
