Method
Place chicken, skin side down, in a single layer in a large baking dish. Sprinkle with salt and pepper to taste.
Combine remaining ingredients and mix well. Pour mixture over chicken. Bake, uncovered, at 375degF for 30 minutes, then turn pieces and bake 20 minutes or until chicken is glazed and cooked through.
Notes
About one pound of boneless, skinless chicken breasts can be substituted for the chicken pieces. This is very tasty when the chicken is cut into bite-sized pieces before cooking and served over hot steamed long-grain rice.
