Not all that bad.... I spent last night canning...certainly not a banner year, but we have enough tomatoes to get us through a few months this winter, and plenty of salsa verde made with green tomatoes. Seeing the honey filling the shelves of the pantry that are usually filled with canned veggies certainly eases any disappointment about this year's small garden. :) It's so cool having our own home grown sweetener!!! I broke out the pressure canner, and even though I just used it as a hot water bath it's so nice to have a huge pot that can hold everything at once! I did all of my canning in just two batches, and that included the jars I needed to re-process. Very cool. Brownies in the oven now, hopefully those will help cheer E up. He has his last continuing education class tonight, and it'll be a relief to both of us to have that whole extra commitment over with. Per Gina's request :), here's the recipe I used - subbing my green tomatoes for the tomatillos we usually grow. 5.5 cups tomatillos/green tomatoes
1 cup chopped onion 5-6 cayennes, chopped 4 cloves garlic, chopped 2 tbs minced cilantro (I used dried since mine bolted earlier this year) 2 tsp cumin 1/2 tsp salt 1 cup vinegar, 5% acidity 4 tbs lime juice (I used lemon, no limes around) I finely chop everything in my little mini
cuisinart and throw everything as it's chopped into a big pot, bring it all to a
simmer, and let it cook for at least 10 minutes before I bottle it. Process 15
minutes for half pint jars, longer, 30 minutes or so, for pints
