1/4 cup corn starch
1 cup sugar
1/4 cup lemon juice (1 1/2 lemons)
3 egg yolks
1 1/2 cups water
1 tea sp grated lemon rind
1 tab butter or margarine
1 pre baked pie shell
Combine cornstarch, sugar, lemon juice--
beat egg yolks---add to above.
add water--bring to boil over med heat
simmer for 5 minutes--stirring constantly
add butter and lemon rind---stir and put in pie shell
Meringue:
3 egg whites---6 tab sugar---preheat 400 degrees
beat whites to soft peaks
gradually add sugar--beat at high speed until stiff
spread over filling--to seal entire edge--
bake 10 minutes until golden
