Sheri's Easy Chicken Enchiladas
2 large chicken breast, cooked, sliced or cubed
1 lg can enchilada sauce
2 cups shredded cheddar cheese
8 medium floor tortillas
1. Preheat oven 350* - mix chicken -1/2 can sauce 1 1/2 cups cheese
2. Roll chicken mixture (about 2 tab) into tortillas -leave ends open
3. Coat bottom of 11" x 7" pan with sauce
4. Place rolled tortillas in pan-seam side down-side by side until full
5. Spread remaining sauce over pan - top with remaining cheese
6. Bake 30 to 40 min - until cheese is melted
Serve with chopped lettuce, onion, green pepper, black olives, sour cream, guacamole.
