Lou's Chocolate Zucchini Cake

2 3/4 cups flour
1/4 cup cocoa
1 tsp. baking soda
1 tsp. salt
1/2 margarine
1/2 cup vegetable oil
1 1/2 cups sugar
2 eggs
1 tbs. vanilla
1/2 cup buttermilk
2 cups shredded zucchini
6 oz. semi-sweet chocolate
3/4 cups walnuts
Sift flour, cocoa, baking soda and salt together,. In separate bowl, beat softened margarine, oil and sugar. Add eggs, vanilla, buttermilk and zucchini. Add flour mixture.
Pour into greased pans; you can use either two round pans or a 9x13" pan.
Chop semi-sweet chocolate and walnuts and sprinkle on top of mix. Bake at 325 degrees for approximately 55 minutes.
If you do a two-layer cake, you can use a cream cheese frosting in between the layers: mix 3 cups powdered sugar, 6 oz. cream cheese, 5 tbs. butter and 1 tsp. lemon extract.
I also put a small dose of chocolate glaze on top but it's really not necessary: 2 oz. of semi-sweet chocolate melted with 1 tbs. corn syrup and 1 tbs. butter.
