Sweet N' Savory Stuffing

2tablespoonsolive oil
1stick butter, softened
1bay leaf
4stalks celery
1large yellow onion, chopped
3apples, chopped
Salt and pepper
3tablespoonspoultry seasoning
¼cupchopped fresh parsley
8cupscubed stuffing mix (your favorite brand)
2to 3 cups chicken stock

Preheat oven to 375 degrees. Preheat a large
skillet over medium high heat. Add olive oil to skillet
and 4 tablespoons butter. Add bay leaf and add the
vegetables. Sprinkle the vegetables with salt, pepper
and poultry seasoning. Cook 5 to 6 minutes until
vegetables and apples begin to soften, then add parsley
and stuffing cubes to the pan and mix. Moisten the
stuffing with chicken broth until all of the bread is
soft but not wet. Butter a casserole dish with ramaining
butter and add stuffing after removing bay leaf. Bake
15-20 minutes until crisp on top.
