Holiday Mini Quiche Cups

3large eggs
1package10-ounce frozen chopped spinach
¾cupshredded reduced-fat cheese
¼cupdiced red and green peppers
¼cupdiced onions

Preheat oven to 350 degrees. Line 12 cup muffin pan with foil baking cups, spray the cups with the cooking spray. Thaw and drain spinach. Mix the spinach, egg, cheese peppers, onions and salt in a bowl. Divide mixture into 12 foil cups. Bake 20 minutes, a knife inserted in the middle should come out clean.
