Chili Quilas
I have already shared one recipe with you from Roma's kitchen-chocolate chip cookies. She says a former neighbor of hers taught her how to make this mexican dish. It tasted so much like a chicken cassarole favorite of mine, but it is so much simpler to make and has no chicken. It it not friendly to low-carb dieters, but boy what a treat. It is a quick dish to make:
- Heat about 3 T oil in skillet
- Corn chips (stale is OK) - enough to fill your skillet
- Add chips to hot oil, along with slivers of onion and tomato chunks. (You may use canned tomatoes).
- The chips will soften and make it easier to mix all together.
- Add Mexican cheese (soft white) - or you may use grated cheddar or jack.
- Add one or two beaten egg(s) and heat until egg is cooked.
- Serve with salsa or hot sauce.
Roma writes, "You may add chicken or beef to the above, but it is traditionally without meat. As you can see, it is very loose -- just practice some and you will discover how you like it. Great for Sunday night supper, or for a brunch dish.
