Chocolate Chip Cookies
Roma Lacuata is one of those cooks who can whip something up without a recipe in hand, and make it taste so good. At Vacation Bible School she brought these cookies. It was hard not to shove the children out of the way for seconds, but virtue prevailed and I behaved. But I did get the recipe. Here it is:
1 lb butter, softenedÊÊ 6 c flour
1 1/2 c sugarÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊ 1 1/2 t salt
2 c dark brown sugarÊÊÊÊÊÊ 1 1/2 t soda
3 eggsÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊ 2 c pecan pieces (or other nuts)
2 t vanillaÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊÊ Ê 5 c choc. chips

1.Ê Beat butter with sugar.Ê Add eggs and vanilla and beat 3 - 4 minutes.
2.Ê Add mixed dry ingredients and beat dough.Ê Will be very dry
3.Ê Add nuts and chips
4.Ê Bake 2 inches apart, at 350 degrees for 10 - 12 minutes only.Ê They will appear soft and not completely cooked.She added the names Mrs. Fields, Carolyn Hamilton and Becky Ramsbotham to hers on the recipe. I assume this represents the chain of people through which she received the recipe.
