  • 1 ½ cups Miniature Marshmallows
  • 1 Teaspoon Vanilla
  • 2 Eggs
  • 3 tablespoons cocoa powder
  • 1 cup Coca Cola
  • 1 cup Butter
  • ½ cup Buttermilk
  • 1 Teaspoon Baking Soda
  • 1 ¾ cups Sugar
  • 2 cups All Purpose Flour

Preheat oven to 350 F. Sift flour and sugar together and set aside. Grease a 9X13 inch pan. Combine baking soda and buttermilk. In a saucepan, heat butter, Coca Cola and cocoa to boiling. Pour over flour and sugar mixture and mix thoroughly. Add buttermilk mixture, eggs, vanilla and marshmallows and stir well. Pour into prepared pan. (The batter is thin at this point and the marshmallows may float to the top; that’s OK.) Bake for 35 to 45 minutes, or until a wooden pick inserted in center comes out clean. (The cake will be quite dark on top.) While cake is still hot, pierce it all over with a fork, and spoon icing over it. If icing is too thick, heat more Coke and add to icing, Makes 15 servings.

Frosting:
Combine 1/2 cup butter, 3 tablespoons cocoa and 6 tablespoons Coke in saucepan and heat to boiling. Pour over 1 pound confectioners’ sugar in a bowl. Beat well, then stir in 1 cup chopped pecans and 1 teaspoon vanilla extract.
