  • 1     cup cake flour
  • 1     cup all purpose flour
  • 2     teaspoons sugar
  • ½    teaspoon cream of tarter
  • ½    teaspoon salt
  • ¼    teaspoon baking soda
  • 1      tablespoon baking powder
  • 1      stick unsalted butter, chilled and cut into small pieces
  • ¾     cup buttermilk (plus 1 or 2 tablespoons if needed)

Preheat oven to 450F.

1. Pulse flours, baking powder, baking soda, sugar, cream of tarter and salt in a food processor fitted with a steel blade. Add butter pieces; pulse until mixture resembles coarse meal with a few slightly larger butter lumps.

2. Add buttermilk and pulse until dough just comes together. Transfer dough onto a floured countertop and form into a ball. Roll or pat dough out to about 1/2 inch think. Cut out biscuits with a round cookie cutter. Transfer biscuits to a baking sheet and bake in a 450° oven for 10 to 12 minutes or till golden. Serve warm.
