Breakfast Pot Pie



For the record, I'm hoping to write something deep and meaningful very soon. I realize that I've been lax in that regard, of late.

In the meantime, however, ya'll are just going to have to make do with my latest breakfast invention. This is a Recipe In Progress (RIP), as I just kinda think there's something missing, but more on that after I give you the skinny:

Breakfast Pot Pie

1/2 pound turkey sausage
5 eggs
shredded cheese (Probably cheddar is your safest bet. I used Mozzarella with sun-dried tomatoes and basil, and it came out nicely, but it's kind of strong in the flavor department) -- about 1/2 cup
2 Tbsp milk
2 1/4 cups Bisquick baking mix
2/3 cup milk

Preheat oven to 450. Grease one 8X8 pan
Crumble and brown sausage in skillet. When completely done, empty into bowl.
Scramble eggs with 2 Tbsp milk. Empty into bowl with sausage, and stir together with cheese.
In a medium bowl, combine Bisquick and milk, and stir to form biscuit dough. Turn out onto waxed paper. Divide into two equal pieces.
Spread one piece of dough over bottom and sides of 8X8 pan, forming a thin "pie crust."
Pour sausage, egg and cheese mixture into pie crust.
Flatten second piece of dough, lay over the top of the sausage mixture, and pinch edges to the bottom layer, sealing the inside.
Bake for about 12-15 minutes, or until top is golden brown. Serve immediately.

This was really good and fairly easy, but there still seems to be something missing. Somehow it seems like some kind of "goop" is needed for the inside. I'm not really sure at this point what to use -- I'm considering salsa or sour cream. It does need to be slightly thick, so that the bottom layer of crust doesn't get too soggy.

Suggestions readily accepted!
