Sweet Success! Banana Nut Nutella Muffins!


I got it right this time.

Many of you may recall my failure at creating banana nut nutella bread. I vowed to try again, with some changes, and I now have a workable recipe! I dropped the water, added more nuts, and raised the cooking time, and also decided that muffins are preferable to loaves.

So, without further ado, I present:

Banana Nut Nutella Muffins

3 ripe bananas
1 cup chopped almonds (two small "Diamond brand" bags)
3 tbsp Nutella

1 stick (1/2 cup) margarine, softened
1 cup sugar
2 eggs, beaten.

2 cups flour
1 tsp baking powder
1 tsp baking soda

Preheat oven to 350 degrees Fahrenheit. Grease 4 6-hole muffin pans, and place muffin cups in each pan hole.
Mash bananas into a fine mush (use a small food processor or chopper), and mix well with chopped almonds and Nutella. Set mixture aside.

Cream margarine and sugar together until fairly fluffy. Stir in eggs, and mix well.

Sift together flour, baking soda and baking powder.

Add banana mixture to margarine mixture, and combine well. Add slowly, mixing as you go, until everything is well blended.

Using a measuring cup, add batter to muffin cups until about 2/3 full. Bake for 25-30 minutes, or until toothpick comes out clean and tops are firm and cracking.

Makes about 20-24 muffins. For me it made 22, but one was kinda big.
