It's like Spring in your mouth.

Since it isn't Spring here (-5C right now, in beautiful downtown Ann Arbor) and won't be Spring for about another 3 months (at which point, Spring will last from 10:45AM to 10:56AM on June 10th, welcome to Michigan) sometimes it's nice to eat something that reminds you of Spring. Sometimes it's also nice to write a sentence (or even a phrase) without using parenthetical phrases. If you're looking for good, straightforward writing, go elsewhere.

But if you want to taste a little bit of Spring in your mouth (and have 8 minutes to make a good homemade meal) then try the following:

Spaghetti with Garlic, Cumin, and Parsley

*Half cup good olive oil
*Half cup italian parsley, chopped
*3 large cloves garlic, minced (I use 4 -- but I'm a garlic whore)
*1tablespoon cumin (I use the whole seeds and grind them in a little mortar and pestle ... trust me it's worth it and takes 20 seconds.) If you use preground cumin, you may need to use a fair amount more than 1 tablespoon, since that stuff is nearly flavorless.
*Half teaspoon (or to taste) crushed red pepper flakes
*Salt and pepper to taste
*Spaghetti (I like the "Barilla Plus" pasta which has more protein, but the same taste as any other pasta. Let's face it, unless you make your own pasta, dried pasta tastes likes dried pasta. And yes, I do make my own sometimes ... I got a great pasta machine for Christmas from my folks. But this recipe is all about the quick.)
*Parmesan cheese -- freshly grated. (Can we just all agree not to buy that grated crap in the green can? It has sand in it people -- to keep it from clumping. (OK, it's silica ... same difference.)) Hey! Look at that, parenthetical phrase inside of a parenthetical phrase.

While the pasta is cooking in salted water, (the box says 11 minutes, which is just nuts, I think. More like 8) mix the first five ingredients together. Drain the pasta reserving 3/4 cup of cooking water. Place pasta back in cooking pot with the reserved water and the other ingredients, except the cheese. Mix well. Serve and top with cheese.

It only takes the 8 minutes to make, tastes nice and fresh, is quite healthy. And most importantly ... very yummy. Pasta sauces don't have to take 5 hours to taste good.
